Diabetes: Anchovy and Tomato Bruschetta

Homemade bruschetta of anchovy, capers, and tomatoes is a tasty appetizer for your next party!

Anchovy and Tomato Bruschetta

1 Fish, anchovies, European, with oil, drained, 2 ounce can, rinsed
2 tsp Capers, canned, drained
3 fresh plum tomatoes, seeded and chopped
1 tbsp fresh chopped onion
1 tbsp chopped parsley
1/4 cup Cheese, romano, fresh, grated
6 piece Bread, Italian, medium slice

Anchovy and Tomato Bruschetta

Directions

Preheat broiler or toaster oven.
Pat anchovies with a paper towel to dry, chop coarsely.
In a small bowl mix together everything except the bread.
Place bread on a baking tray and lightly toast in oven on both sides.
Serve bread immediately with mixture spooned on top.

If sodium is a concern for you than watch out for this, it is on the higher side for sodium!
