An apricot treat made tasty with oats, cinnamon, walnuts, and brown sugar.
8 oz Apricots, dried, chopped
1/3 cup water
1 cup old fashioned rolled oats
1 cup Flour, all purpose, unbleached, enriched, sifted
1/2 cup Bran, oat, dry
1/2 cup brown sugar
1/2 cup chopped walnuts
1/2 tsp baking powder
1/2 tsp ground cinnamon
2 egg whites
3 tbsp extra virgin olive oil
Preheat oven to 350F and lightly grease two baking trays. Put the apricots in a bowl, pour over the boiling water and allow to soak for 10 minutes.
While the mixture cools, combine the oats, flour, oat bran, sugar, walnuts, baking powder and spices in a separate large bowl.
Beat the egg white until stiff peaks begin to form, and then fold in the cooled apricot mixture. Add the oil, then mix into the dry ingredients.
To bake, drop spoonfuls of the mixture onto the prepared baking trays and then bake until lightly brown, roughly 12 to 15 minutes. Let cool for 5 minutes before removing them from the tray and then transfer to a wire cooling rack for further cooling before serving.
If you can find a poblano pepper, use that in place of the green pepper seasoned with cayenne. Also, you may substitute an artificial sweetener for the tablespoon of sugar!
