Diabetes: Beet Salad

A beet salad with red onion, apple, and vinegar!

Beet Salad

2 cup Beets, cooked, drained, sliced
1/2 cup Onion, red, fresh, sliced
1 Apples, fresh, extra small, 2 1/2″, USDA Commodity Commodity, cored and diced (Granny Smith)
2 tbsp cider vinegar

Beet Salad

Directions

Mix beets, onion, apple, and vinegar. Refrigerate until chilled. Toss lightly and serve!
