Diabetes: Chocolate Brownies

Chewy homemade brownies with a gooey chocolate glaze!

Chocolate Brownies

1/3 cup salted butter, softened
1 cup sugar
3 egg whites
1 tsp vanilla extract
2/3 cup white all purpose flour
1/2 cup Cocoa Powder, unsweetened, baking
1/2 tsp baking powder
1/4 tsp table salt
2/3 cup confectioners sugar
2 tbsp Cocoa Powder, unsweetened, baking
1/4 tsp vanilla extract
3 tsp water, hot
1 oz Decorative Candies, sprinkles, rainbow, serving (optional)

Chocolate Brownies


Preheat oven to 350 degrees F.
Beat butter and sugar until fully combined. Blend in egg whites. Blend in vanilla. Mix flour, cocoa, baking powder, and salt in a separate bowl. Slowly beat dry ingredients into wet ingredients.

Spoon mixture into a greased 8 inch baking pan. Bake 20 to 25 minutes or until fully set and cooked in the middle. Let fully cool on a wire rack.
Beat together confectioner’s sugar, cocoa, vanilla, and hot water. Only beat in enough water to make preferred texture. When brownies are fully cooled, spread frosting over brownies. Sprinkle with candy sprinkles if using. Slice into squares.
