Diabetes: Chocolate Pudding

Creamy chocolate pudding with cinnamon and vanilla!

Chocolate Pudding

1/4 cup Cocoa Powder, unsweetened
2 tbsp cornstarch
1 1/2 cup lowfat milk
1/3 cup sweetener (sugar substitute)
1 tsp vanilla extract
1/8 tsp ground cinnamon
4 Decorative Candies, sprinkles, rainbow, serving, assorted (optional)

Chocolate Pudding


In medium-sized bowl or 1-quart glass measure mix together cocoa powder and cornstarch. Slowly add milk and stir with a wire whisk until blended well.
Place the mixture in the microwave at high for 2 minutes. Stir.
Put mixture back into the microwave at medium-high (70% power) for 3 ½ to 4 ½ minutes or until thickened, Make sure to stir every 1 ½ minutes.
Add sugar substitute, vanilla and cinnamon and stir occasionally.
Let settle for 5 minutes and then serve (can serve either warm or chilled).
If desired, top pudding with candies.
