Diabetes: Cheesecake Bars With Nuts

These tasty chocolate cheesecake bars are a snap to make and will be a family favorite!

Cheesecake Bars With Nuts

12 oz fat free cream cheese, softened
2 1/4 cup sugar
1 cup liquid egg substitute
1 tbsp vanilla extract
1 cup Flour, pastry, whole wheat, stone ground
1/2 cup Baking Chips, milk chocolate, melted
3 tbsp Cocoa Powder, unsweetened
1/3 cup chopped walnuts

Cheesecake Bars With Nuts


Preheat oven to 325 degrees F. Spray an 8×8 inch baking dish with nonstick cooking spray and set aside.
In a large bowl, beat the cream cheese with an electric mixer until smooth.
Add in the sugar. Beat well, then beat in the egg substitute and vanilla.
Slowly beat in the flour and mix well.
Remove 1 1/2 cups of the batter into a separate small bowl.
Stir the melted chocolate and cocoa into the remaining batter; mix well and pour into the baking dish. Pour the reserved batter evenly over the chocolate layer, top with walnuts.
Bake until lightly browned, about 55 minutes. Cool completely, cover, and chill. Cut into 16 bars before serving.

To melt chocolate chips: place in a glass measuring cup and microwave on high for 30 seconds, stir, and repeat until chocolate is melted being careful not to overcook!
