Diabetes: Chili

Quick beef chili seasoned with barbecue spice mix!


1 Cooking Spray, original, 1/3 sec spray
8 oz lean ground beef (10% fat)
1 cup fresh chopped onion
1 cup fresh chopped celery
1 cup sliced green bell pepper, chopped
14 1/2 oz canned unsalted diced tomatoes, including liquid
16 oz red kidney beans, canned and drained, and rinsed
1 tsp Seasoning, barbecue



Lightly coat a nonstick frying pan with cooking spray. Cook the beef and onion, stirring occasionally and breaking up the meat, until the onion is tender and the meat is no longer pink, about 3 minutes.
Add the celery and bell pepper. Cover and cook 4 to 5 minutes or until the vegetables are tender.
Stir in the tomatoes and their liquid, beans, and spice mix. Add water by the 1/4-cup if the mixture is too dry. Cover and simmer for 10 minutes, or until hot.
