Diabetes: Garbanzo Bean Salad

High-fiber salad of garbanzo beans, parsley, and sour cream!

Garbanzo Bean Salad

15 floz Beans, chickpea/garbanzo, unsalted, canned, rinsed and drained
1/4 cup Sour Cream, light
1/2 cup chopped parsley
1 pinch table salt

Garbanzo Bean Salad


In a medium bowl, mix all of the ingredients, cover, and refrigerate for at least an hour.

For a high-fiber dip or spread, place all of the ingredients in a blender or food processor and puree until smooth!
